French Meringue

French Meringue


  • 100 ml water
  • 15 g Spix Eggless whites
  • 115 g granulated sugar
  • 115 g icing sugar
  • 5 g vanilla extract - optional
  • food colouring - optional


Step 1: Combine the water and Spix Eggless whites and blend with a stick blender until smooth.

Step 2: Transfer the mixture to a bowl and mix for about 5 minutes until forming soft peaks. 

Step 3: Add the granulated sugar gradually and mix until firm.

Step 4: Carefully and gradually fold in the icing sugar.

Step 5: Add the vanilla extract and colouring if desired.

Step 6: Pipe to the desired shapes and bake at 90 C until dry.
