Sponge Cake


  • 15 g Spix eggless whites 
  • 210 g sugar
  • 110 g sunflower oil 
  • 170 g flour
  • 30 g cornstarch
  • 10 g baking powder
  • 4 g salt
  • 220 ml water 


Step 1: Preheat the oven to 180 C.

Step 2: Combine 110 ml of water with Spix Eggless whites and blend with a stick blender until smooth.

Step 3: Transfer the mixture to a bowl and mix for about 5 minutes until forming soft peaks. 

Step 4: Add the sugar gradually and mix until firm.

Step 5: Sieve the dry ingredients and mix with the rest of the water and sunflower oil until uniform.

Step 6: Mix one quarter of the meringue into the mixture until incorporated.

Step 7: Fold in the rest of the meringue in 2 parts. Be careful to not overmix it.

Step 8: Bake for 20 minutes or until the top is golden brown and the sponge bounces back when you push it lightly. When it leaves a dent, put it back in the oven for 5 more minutes.
