Marshmallows

Marshmallows

Ingredients:

  • 115 g powdered sugar

  • 60 g cornstarch 

  • 120 g Spix Eggless Whites (hydrated)

  • 4 g agar agar powder

  • 240 g water

  • 390 g corn syrup

  • 295 g sugar

  • 15 g vanilla extract

  • 1 g salt

Instructions:

  1. Mix powdered sugar and cornstarch. Grease an 8 x 8-inch pan and dust with the mixture.

  2. Whip Spix Eggless Whites until stiff peaks form.

  3. In a saucepan, boil agar agar with water until thickened (3 min). Stir in corn syrup and sugar until dissolved, then boil undisturbed to 115C.

  4. Remove from heat, whisk in vanilla and salt.

  5. Slowly pour hot syrup into whipped Spix Eggless Whites while mixing on low, then whip on high for 5-8 minutes until thick.

  6. Pour into the prepared pan, smooth the top, and let set.

  7. Dust with more powdered sugar mixture, cut into pieces, and coat all sides.

  8. Store in an airtight container.
